As a child, I always loved it when my parents would throw us kids a culinary curveball and serve breakfast for dinner. It felt kind of crazy and exciting to eat waffles or pancakes in the evening. It was most likely a gesture born of necessity rather than for the fun of it; we’ve all had that moment when the cupboard is light, there’s no time to run out to the store and the kids need to eat ASAP. Now that I’m a parent, I’ve developed my own renegade move when I’m in this position. I like to make omelets and fill them with leftovers: sautéed fruit, salad, lunch meats, I’ve even used pasta.     We often have breakfast for dinner. We have chickens so we always have alot of eggs but our busy mornings most often do not allow for breakfast so because we have alot of eggs, and because we both love breakfast foods we make it for dinner. It would great to get some new inspirations.

    I always thought it balanced out the fact that my mom served me leftover spaghetti for breakfast when I was a kid.
