As a child, I always loved it when my parents would throw us kids a culinary curveball and serve breakfast for dinner. It felt kind of crazy and exciting to eat waffles or pancakes in the evening. It was most likely a gesture born of necessity rather than for the fun of it; we’ve all had that moment when the cupboard is light, there’s no time to run out to the store and the kids need to eat ASAP. Now that I’m a parent, I’ve developed my own renegade move when I’m in this position. I like to make omelets and fill them with leftovers: sautéed fruit, salad, lunch meats, I’ve even used pasta.
